Coeliac Crohn's Chronicles

Posted by Megan McConnell
Welcome to my Blog! :)

My name is Megan McConnell. I am a singer and model in London and also have a part time job at a bar to make ends meet. As a young girl living in London with Coeliac and Crohn's Disease I want to share anything that could be of use to you via video, pictures, links, recipes or any ideas and revelations I have.

My profession is not one that lends itself to coping easily with these conditions but I am determined to discover a way, both through medication and lifestyle changes, that will help me continue doing what I enjoy and what I'm passionate about.

There's plenty to explore in London including lots of food markets and deli's. I am a big foodie and I look forward to discovering more gluten free friendly foods as well as foods that wont aggravate my Crohn's disease. Both of these conditions require me to eat specific foods and it is important to be on a low fibre diet during a flare up, therefore being prepared when I'm out at work in remote locations is essential.

It's only recently that I have become more enthusiastic about cooking and being creative in the kitchen. In this blog I will also post updates of new dishes and recipes that I try along the way.

...Filling part baked potato skins with creme fraiche, pesto, cheese & potato to put back into the oven for another 15/20 mins! I avoid eating the potato skins as they are roughage and high in fibre and will only cause me problems. Very Tasty!

Love this Megan. I'm going to try your recipes as I'm sure they'll be good for my IBS - I've been told not to go mad on fibre either!
